The Sidama beans are of the Typica variety and are fully washed to ensure clarity and consistency in the cup. The washed processing method involves removing the mucilage from the coffee cherries before fermentation, resulting in a cleaner, brighter cup with enhanced acidity and refined flavours. The Grade 2 classification for Sidama coffee indicates a high-quality washed coffee with minimal defects (4-12 defects per 300g), showcasing the careful attention to detail in its production.
